Root Miso Salad Recipe

A vibrant root salad with honey and miso salad dressing that will brighten up any dish and ignite your taste buds.

We love the combination of earthy vegetables mixed with the sweetness of apple, topped off with a large drizzle of the sweet and salty honey and miso salad dressing.

The dish takes less than 5 minutes to make, costs almost pennies and can be mixed up to suit your tastes! The crunchy texture, bursts of flavour and nutritious value is not to be missed. It has a lovely, runny consistency that mixes smoothly for the dressing.

Serves 4 people

Salad ingredients:

  • 300g carrots
  • 300g raw beetroot
  • 3 apples
  • Thyme sprigs

Miso salad dressing ingredients:

  • 1 tablespoon miso paste
  • 1 tablespoon honey 
  • Splash of water

  1. Cut the veggies raw, any way you please. We like to grate, ribbon, and slice all together. It gives a really varied appearance, and looks particularly wintery!
  2. Mix the miso, honey and a touch or water to make a sweet and salty dressing
  3. Mix all the ingredients in a bowl and sprinkle with thyme leaves. Flat-leaf parsley is also a great earthy to a simple dish.
