Our raspberry and ginger shrub is a drink very like a cordial. Scottish raspberries, pollinated by our bees and the spicy feeling of ginger make this a lovely tart drink to enjoy with sparkling water or mixed with a cocktail.
Don't be put off by the vinegar in this drink, it is the perfect combination with the sweetness of the raspberries and will taste deliciously tangy.
Ingredients: Raspberries, White Wine Vinegar, Sugar, Fresh Root Ginger.
Pop the lime juice, sugar and mint into a jug and muddle using a muddler, making sure you crush all of the mint. Pop into a glass and add in the shrub. Fill with ice. Pour the rum over the ice, and stir gently using a long-handled spoon. Finish with soda water. Enjoy!
